Named after Hawaii's state fish, the Polynesian thatch roof restaurant seems to float on a million-gallon saltwater lagoon filled with tropical fish. Named "Top Young Chefs To Watch" by Hawaii Hospitality and "Future Faces of Hawaii Tourism" (the only chef recognized) by TravelAge West's editorial board,* Chef Isaac Bancaco is dedicated to creating the perfect union of simplicity and taste in his dishes at Humuhumunukunukuapua'a restaurant at Grand Wailea.
Born and raised on Maui, Bancaco strives to showcase the best the Hawaiian Islands offers, both from the land and sea, while incorporating techniques and influences of his Filipino, Hawaiian and Chinese roots. He is a key player in several of the Maui County Farm Bureau's initiatives to encourage consumers to buy local with programs such as Grown on Maui. Bancaco is one of the initial chefs to support the launch of Growing Future Farmers, a program that donates $1 for every "Grown on Maui" salad sold. Bancaco's "farmivore" approach focuses on creating delicious dishes by enhancing natural flavors through the unpretentious use of the purest and freshest ingredients.
Bancaco spent several formative years under the tutelage of world renowned chef, and James Beard Award Winner, Ming Tsai; even competing alongside him as his sous chef on the original "Iron Chef America" against famed Iron Chef, Bobby Flay. Tsai, with Bancaco's assistance, won the challenge, handing the Iron Chefs their first loss in the then new "Kitchen Stadium America." Bancaco also served as sous chef for James Beard Award Winner, Roy Yamaguchi – one of the founder of Hawaiian Regional Cuisine.
